Monster Energy Bites

We’ve been trying to eat healthier here in our home, which is proving hard to do right after the Christmas holidays! We were gifted candy, cookies, and chocolate – so much chocolate – and in order to get rid of them, they have to be eaten..right?!

IMG_4014My favourite (and weakness) are Ferrero Rocher chocolates and we were gifted 3 boxes!!! Which I am totally fine with buuuut I’m just getting over my December cookie diet and will be sitting on a Mexican beach in just two months soooo like I said, we’re trying to eat healthier.

A super quick and ridiculously easy recipe for a “healthier cookie” are energy bites..balls..whatever you want to call them! These little balls of deliciousness are great to have in the fridge for a quick bite on the go or a simple side to your breakfast. My husband started school last week so they are also a great snack for him while sitting in class.

The best part – there are endless flavours! So many options for making energy bites! I recently saw a s’mores flavour and seeing s’mores are a favourite of mine, I know I have to try those ones out next! Do you have a favourite flavour?


Monster Energy Bites
Yields: 12-14 bites 


1 cup oats (I used quick oats, old-fashioned oats work too!)
1/4 cup peanut butter
1/4 cup honey
1/4 cup mini M&M’s
1/4 cup mini chocolate chips
1/2 tsp vanilla extract


  1. In a medium bowl, add in all the ingredients and stir to combine. The mixture will be very sticky! Refrigerate the mixture for at least a half hour.
  2. Remove from refrigerator and roughly scoop out a TBSP of the mixture and by hand, roll into a ball. Roll all the mixture into balls.
  3. Store the balls in a sealed container in the refrigerator for up to a week. Or freeze them and pull out when needed!
