New week, new energy bite! Are you getting tired of seeing them yet?!
After last week’s Nutella Energy bite, I was feeling like we needed something a liiiittle more healthier. But speaking of those yummy little Nutella bites, have you tried them yet?! World Nutella Day is coming up on February 5th, perfect timing for you to give them a try!!
I saved a few energy bite recipes I have come across and on my list were these ones: Carrot Cake Energy Bites! These little bites have so much packed into them; coconut oil, peanut butter, honey, oats, chia seeds, flax, coconut, carrot and a dash of cinnamon!!! All that in these delightfully tasty little bites. I know what I’m grabbing for a quick breakfast on the run tomorrow!
Carrot Cake Energy Bites
Yields: 16 bites
1 tbsp coconut oil
1/3 cup peanut butter
1/4 cup honey
1/2 cup quick oats
2 tbsp chia seeds
1/4 cup ground flax
1/4 cup shredded coconut
3/4 cup finely shredded carrot
1/2 tsp ground cinnamon
- In a microwave safe bowl, melt the coconut oil. Stir in the peanut butter and honey until smooth.
- Stir in all remaining ingredients and mix thoroughly. Refrigerate the mixture for at least 30 minutes.
- Remove from refrigerator and roll into 1 inch balls. Optional – roll each bite in shredded coconut.
- Store in airtight container, in the refrigerator, for up to one week.
