The flu hit our little home BIG the other night, took all three of us out! Not only us but it’s hit my nephew, brother-in-law, mom, dad and father-in-law…just slowly taking us out. Luckily, we woke up today feeling much better! Buuut there really is no rest for the mamas so today I am relying on lots of coffee and a new energy bite recipe to get me through the day!
I’m working my way through the list of energy bite flavours I wanted to try and next up we’re these guys: S’mores! I don’t know when my love for all things s’more started but I don’t see it going away anytime soon and that’s okay! There’s just something about chocolate, marshmallows and graham crackers coming together to create such a delicious little treat!
The only thing better than enjoying these energy bites…enjoying a real s’more over a summer night fire…hurry up summer!!
S’more Energy Bites
Yield: 20 bites
3/4 cup peanut butter
1 cup oats
1/2 cup graham cracker crumbs, divided
2 tbsp honey
1/3 cup chocolate chips
1/4 cup mini marshmallows
- In a medium mixing bowl, combine all ingredients (save 1/4 cup graham cracker crumbs for topping) and stir to mix thoroughly. Refrigerate the mixture for 30 minutes.
- Remove from refrigerator and roll into 1 inch balls. Roll each ball in remaining graham cracker crumbs.
- Store in airtight container, in the refrigerator, for up to one week.
