We just recently spent a week in Mexico with my family; it was great! The last time I was in Mexico was for my honeymoon, two and a half years ago. This was a totally different experience as it involved a 4 year old, a nearly 1 year old, and a 10 month old! Other than a trip to the hospital on the second day for my 4 year nephew (ending in 6 stitches in his cheek), the trip went way better than what I was expecting!
It was our son’s first time flying and staying overnight (longer than a weekend) somewhere else so I was a little nervous…but he ended up impressing all of us! He flew with very little trouble, slept pretty good, and absolutely loved the water, both pool and ocean!
When we got home (to the cold…boo), it’s been go go go! The week we were back home, was the week leading up to our son’s first birthday; where has time gone?! I did an at-home-cake-smash, which turned out so well, and had his birthday party prep to get done!
Two days after his party, I was feeling exhausted! I was in desperate need of a little pick-me-up!! Hello chocolate peanut butter energy bites…they were exactly what I needed! Well…first I enjoyed a little handful of chocolate chips then decided they should probably go in something before I eat the whole bag!
They are the perfect amount of chocolate, almost taste too good to be a “healthier” treat!
Chocolate Peanut Butter Energy Bites
1 cup oats
1/3 cup honey
1/2 cup peanut butter
1/4 cup cocoa powder, unsweetened
1 tsp vanilla
1 tbsp chia seed
1/4 cup mini semi-sweet chocolate chips
- In a medium bowl, add in all the ingredients and stir to combine. The mixture may be sticky! Refrigerate the mixture for at least a half hour.
- Remove from refrigerator and roughly scoop out a TBSP of the mixture and by hand, roll into a ball. Roll all the mixture into balls.
- Store the balls in a sealed container in the refrigerator for up to a week. Or freeze them and pull out when needed!
